●Bijofu, Junmai Daiginjo, Sekai no Tsubasa (Kochi Prefecture, Hamakawa Shoten)

Premium Yamadanishiki rice from Hyogo Prefecture's Special A district Tojo town, the famed area for Japan's best rice for brewing sake, is polished to 45%. The gentle and clean aroma that is unique to the Kumamoto yeast, the crisp citrus acidity, the refreshing taste along with the crisp, subtle sweetness that spreads inside the mouth are all perfectly balanced in this Junmai Daiginjo.

●Matsunotsukasa, Junmai Daiginjo, Black Label (Shiga Prefecture, Matsuse Shuzo)

Yamadanishiki rice produced in Hyogo Prefecture's Special A district Tojo town is polished to 35% for this brew.
The Kanazawa yeast delivers a soft aroma with hints of apple and pinapple. The mild sweetness and crips acidity is followed by a fluid spread of umami, and finishes off with a subtle bitterness.

●Raifuku, Junmai Daiginjo "R" (Ibaraki Prefecture, Raifuku Shuzo)

Yamadanishiki rice grown in Hyodo Prefecture's Tojo is polished to 40% for the koji and 50% for the kake mai and fermented with flower yeast taken from tsubaki (camellia) flowers.
With a subtle and elegant fragrance, this sake offers a delicate texture with a smooth balance of refined sweetness and refreshing acidity.

●Suigei, Junmai Daiginjo "Asahitomo" (Kochi Prefecture, Suigei Shuzo)

This is a Junmai Daiginjo is created by polishing Hattannishiki rice grown in Hiroshima Prefecture to a polishing ratio of 40%. Sake brewed from Hattannishiki gives a crisp and fine texture. Its gentle aroma is paired with a hint of citrus acidity and a sharp, clean aftertaste.

[3rd delivery] September

●Katsuyama, Junmai Daiginjo "Den" (Miyagi Prefecture, Katsuyama Supreme Sake Co.)

Brewed using the traditional method of pressing the mash in bags and, after conducting "oribiki" to separate the sake and deposits, it is bottled without being filtered. The bottles are then pasteurized and immediately refrigerated at -5C to age for 1 year.
This sake delivers a rich Ginjo aroma and refined taste, with a sharp acidity followed by delicate umami.

●Toyobijin, Junmai Daiginjo "Ichiban Matoi" (Yamaguchi Prefecture, Sumikawa Shuzojo)

This is the brewery's most premium sake, which uses only Yamadanishiki grown at the company's own rice paddies and polished to the ratio of 40%.
With the sweet aroma and freshness like that of strawberries, it provides the exquisite balance of umami, aroma, aftertaste and crisp acidity in combination with its subtle sweetness.

To maintain sake quality, all products will be delivered via refrigerated “cool takkyubin” courier service all the way from the brewer to the customer. Cancellation due to the customer's personal preference or circumstances etc. will not be accepted.
